    Delicious Desserts: Chocolate Peanut Butter Chia Seed Pudding

    It does sound sumptuous, but believe us when we say it tastes as sumptuous as well. Enjoy this snack, guilt free!

    • Yields: 2 Servings

    Ingredients

    2 tablespoons unsweetened cocoa powder

    2 tablespoons Splenda

    ¼ cup PB2 (powdered peanut butter)

    ¼ cup chia seeds

    1 cup skim milk or unsweetened almond milk

    1 teaspoon vanilla extract (optional)

    Directions

    1Mix cocoa powder, Splenda, and PB2 together, and incorporate well so there are no lumps.

    2Stir in the chia seeds and stir well to combine.

    3Whisk in the milk and vanilla.

    4Let side for 5 minutes, then whisk again. Cover and refrigerate for at least 2 hours before serving.
