    Divine Dinners: Broiled Cod

    Fish is essential to any diabetic diet, so make sure you serve fish dishes at least twice a week. Start with this broiled cod for dinner!

    Ingredients

    Cooking spray

    3 tablespoons light mayonnaise

    1/2 lemon, juiced

    1/2 teaspoon paprika

    1 teaspoon dried parsley

    1/4 teaspoon ground black pepper

    4 cod filets (about 1 pound total)

    1 tablespoon grated Parmesan cheese

    Directions

    1Preheat broiler. Spray a baking sheet or broiler pan with cooking spray.

    2In a small bowl mix together mayonnaise, lemon juice, paprika, parsley and ground black pepper.

    3Place cod filets on broiler pan and spread mayonnaise mixture evenly among the cod filets. Sprinkle Parmesan cheese on top of filets.

    4Broil filets for 8-10 minutes.
