    Diabetic Desserts: Vermicelli Pudding

    This delicious dessert with an Asian touch is full of wonderfully fragrant flavors that are sure to add a tasty end to your next meal. Enjoy!

    • Yields: Serves 6

    Ingredients

    125g fine vermicelli

    1.2L semi-skimmed milk

    2 tbsp caster sugar

    2 cardamom pods

    Artificial sweetener, to taste

    2 tbsp pistachio nuts, roughly chopped

    Directions

    1Bring a pan of water to the boil, add the vermicelli and simmer for 2 minutes.

    2Drain. Return to the pan and add the milk.

    3Simmer for 15-20 minutes, stirring occasionally.

    4Stir in the sugar. Cook for a further 5 minutes until the vermicelli and milk have thickened.

    5Remove from the heat, sweeten with sweetener to your taste, and sprinkle over the pistachio nuts.
