Red Pepper Flake Whole Wheat Pasta with Broccoli

Just a hint of spice from the red pepper flakes, the delicious pasta dish is easy to make and a pleasure to serve.

  • Yields: 6 servings

Ingredients

1 pound broccoli, stems trimmed

1 pound ziti whole wheat pasta

2 tomatoes, seeded and chopped

1/4 cup extra virgin olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes

1/4 teaspoon salt

Directions

1Bring large pot of water to boil.

2Add broccoli and salt.

3Cook about 5 minutes or until broccoli is tender-crisp and still bright green.

4Remove broccoli from pot, leaving the water in pot.

5Quickly rinse broccoli under cold, running water or submerge in ice-water bath. Set aside.

6Heat oil in large, deep skillet over medium heat.

7 Add red pepper and garlic and cook about 1 minute --about just until garlic begins to sizzle. Turn off heat.

8Bring pot with broccoli cooking water back to a boil.

9Add pasta and cook until just tender. Drain pasta, but keep 1 cup of cooking water.

10Chop broccoli into 1-inch pieces and add them skillet holding oil, garlic, and red pepper mixture.

11Cook mixture over medium heat until hot.

12 Add pasta and tomatoes to skillet with broccoli mixture.

13Toss together.

14Add pasta water as needed to keep the dish moist in the skillet.
